At Vinos Iberian we continue with our project to produce white wines from the Rueda appellation. Valdejaros is made with Verdejo grapes from vineyards between 40 and 120 years old. The vineyards of this variety are planted on alluvial and stony terraced soils, very close to the Duero River. The soil contains high levels of calcium and magnesium, giving this single varietal grape its distinctive characteristics. The grapes are harvested at night, taking advantage of the low temperatures to reduce oxidation as much as possible. Valdejaros is a bright yellow white wine, with a high aromatic intensity on the nose, providing aromas of thyme, fennel and aniseed aromas and hints of fruits such as pear, grapefruit, pineapple and flowers. It has a fresh and voluminous entry on the palate, with a small touch of acidity that enhances the stone fruit and citrus flavor. It has a long and pleasant aftertaste of mountain herbs.
